Homemade Carmel’s

1 cup brown sugar

1 cup white sugar

1 cup white karo syrup

1 Stick butter

Bring to boil

Cover and boil for three minutes, stir about three times during that three minutes.

Uncover and add slowly

1 cup whipping cream or canned milk

Stirring continually, wanting to get a nice creamy texture

Turn down to just a soft boil, cook until desired doneness.

I like it just after a softball stage.

Take off of heat and stir in 1 teaspoon vanilla

Then pour onto a buttered cookie sheet and let cool.

Creamy Fudge

Put pan and cook to Softball stage.

4 ½ C. Sugar

1 Can Evp. Milk

It will take about two min from the time it starts to boil.

Put in large bowl (I use my roll mixing bowl)

1 cube butter

2 cups nuts chopped

2 pks. Small marshmallows

2 pks. Chocolate chips

Pour hot mixture over ingredients in bowl, stir very good.

(If you want some marshmallow not stirred in that is all right.)

But everything else should be stirred in really good.

Set aside and let cool then cut.

Needs to be stored in cool place.

Fawn’s Christmas Balls

1 pound miniature marshmallows

1 can Borden’s eagle brand condensed milk

2 ½ cups chopped nuts

2 ½ cups dates- chopped small

2 ½ cups coconut

2 ½ cups fine graham cracker crumbled – also about 2 cups to roll balls in

2 ½ cups chocolate chips

Mix all ingredients together really well

You can moisten hands as you mix if needed.

Make balls and then roll in graham cracker crumbled fine.

(this is not the same 2 1/2 that you mixed in balls)

You may need to moisten hand as you roll into balls.

Then store in a tight closed container.

The longer they are storied the better they get.

Option: can also add rice crispies 2 ½ cups

You might need to add a little more sweet and condensed milk, I did

Chicken and Almonds

This recipe came from Becky Pulver. One of our family favorites.

2 c rice

3 cans cream soups (I use 4 cream of chicken and cream of celery)

4 chicken breasts (1 use 3)

Parsley

1 cube (1/2 cup) butter melted (I do not always put the whole amount - sometimes just half)

½ c milk

Parmesan cheese

Sliced almonds

Mix soups, milk and butter together. Set aside 1 can of soup mixture. Add rice to remaining soup mixture. Pour into 9x13 baking dish. Cut chicken into small pieces and put over soups and rice. Pour remaining can of soup mixture over chicken. Sprinkle parmesan cheese, parsley and almonds on top. Bake at 350 for 1 ½ hours. Makes 8 servings.

Parcell's Quick Rolls- very light

PARCELL’S QUICK ROLLS

Put ¾ cup hot water in a large bowl. Add 3 Tablespoons yeast.

Sprinkle 2 to 3 tablespoons sugar over this. Let this stand while you: (Don’t disturb)

Heat 2 cups milk and melt 1 Cup (one stick-Crisco) of shortening in hot milk.. Once shortening starts breaking up, turn off stovetop burner.

Blend 4 eggs and add 1 cup sugar and blend very good, add milk mixture when luke warm.

Add 5 cups flour and 1 tablespoon of salt to yeast mixture, and then add milk and egg mixture to yeast and flour. Mix well and let rise. I will let it Rise twice before I add enough flour to form dough to roll out. Let raise after rolls are in pans until light and bake at 350 degrees F for 20 minutes.

(If I use my bosch mixer, I mix two extra cups of flour in and mix for about 10-15 min. Then I don’t add anymore flour)

Orange rolls, or cinnamon rolls: add 1 ½ cups sugar to egg mixture: This will give you a sweet dough.
